Cold strawberry and melon soup

A light and healthy recipe to enjoy on a warm summer's day

Prep time: 15 min,  Cooling time: 1h,  Total time: 1h 15 min,  Serves: 4

INGREDIENTS

  • 400g strawberries, hulled
  • 400g watermelon pulp, chopped
  • 250ml buttermilk
  • 1-2 tbsp lemon juice
  • 3-4 tbsp honey
  • Mint sprigs to garnish

METHOD

  1. Halve two strawberries and set them aside to garnish later. Chop the remaining strawberries into small pieces.
  2. Set aside 4 tbsp of buttermilk. Place the remaining buttermilk in a blender with the chopped strawberries, watermelon, lemon juice and honey. Blend until smooth.
  3. Refrigerate the soup for at least one hour to chill. When ready to serve, divide it into four bowls and top with a swirl of the reserved buttermilk, the strawberry halves and fresh mint.

TOP TIP

This soup can be enjoyed as a dessert or snack. Something sweet and healthy that the kids can enjoy, too!
