INGREDIENTS
- 400g strawberries, hulled
- 400g watermelon pulp, chopped
- 250ml buttermilk
- 1-2 tbsp lemon juice
- 3-4 tbsp honey
- Mint sprigs to garnish
METHOD
- Halve two strawberries and set them aside to garnish later. Chop the remaining strawberries into small pieces.
- Set aside 4 tbsp of buttermilk. Place the remaining buttermilk in a blender with the chopped strawberries, watermelon, lemon juice and honey. Blend until smooth.
- Refrigerate the soup for at least one hour to chill. When ready to serve, divide it into four bowls and top with a swirl of the reserved buttermilk, the strawberry halves and fresh mint.
