Creamy butter bean pasta

Celebrity chef and presenter Briony May Williams shares one of her fave recipes

Prep time: 10 min, Cook time: 15 min, Serves: 4

INGREDIENTS

  • 400g pasta
  • 1 tin butter beans, drained and rinsed
  • 2 tsp smoked paprika
  • 2 tbsp lemon juice
  • 2 tsp mixed herbs
  • 1 tsp onion granules
  • 2 tbsp grated parmesan
  • 1 tbsp rapeseed oil
  • 4 sun-dried tomatoes
  • Handful fresh basil to serve
  • Grated parmesan to serve

METHOD

  • Cook the pasta as per the directions on the packet with a drizzle of oil and a teaspoon of salt. Drain but keep a cup of the starchy pasta water.
  • Place the butter beans, smoked paprika, lemon juice, mixed herbs, onion granules, grated parmesan, rapeseed oil, a pinch of salt and pepper, and half the reserved pasta water in a blender (or in a bowl and use a stick blender) and blitz until smooth.
  • Chop the sun dried tomatoes. Stir the sauce and sun-dried tomatoes through the cooked pasta and heat until warmed through, add the rest of the pasta water to loosen the sauce if needed.
  • To finish, serve topped with fresh basil and grated parmesan.
