INGREDIENTS
- 400g pasta
- 1 tin butter beans, drained and rinsed
- 2 tsp smoked paprika
- 2 tbsp lemon juice
- 2 tsp mixed herbs
- 1 tsp onion granules
- 2 tbsp grated parmesan
- 1 tbsp rapeseed oil
- 4 sun-dried tomatoes
- Handful fresh basil to serve
- Grated parmesan to serve
METHOD
- Cook the pasta as per the directions on the packet with a drizzle of oil and a teaspoon of salt. Drain but keep a cup of the starchy pasta water.
- Place the butter beans, smoked paprika, lemon juice, mixed herbs, onion granules, grated parmesan, rapeseed oil, a pinch of salt and pepper, and half the reserved pasta water in a blender (or in a bowl and use a stick blender) and blitz until smooth.
- Chop the sun dried tomatoes. Stir the sauce and sun-dried tomatoes through the cooked pasta and heat until warmed through, add the rest of the pasta water to loosen the sauce if needed.
- To finish, serve topped with fresh basil and grated parmesan.
